Three years ago, Chef Chris Shepherd came up with a crazy idea to open five new concepts in five years, all in one building. A real-world example of Underbelly Hospitality’s philosophy to always be learning, One Fifth allows Chris, chef de cuisine Matt Staph and their team to explore new cuisines, new cultures and shine a light on food that inspires them.

One Fifth Steak was a big surprise to everyone, especially to Chef Chris. And yet, he loved it so much that it inspired Georgia James. One Fifth Romance languages was a huge learning curve for Chris—pasta isn’t his true love—but it was, as One Fifth was designed, an incredible vehicle for education. The entire staff at One Fifth—both front and back of house—was enamored with Mediterranean food, and Chris and his business partner Todd Mason are actively looking for a space for a long-term restaurant for this concept. The team is halfway through their exploration into Gulf Coast cuisine, and the restaurant's most casual concept has proven to be a lot of fun, complete with Captain's Platters and plenty of jambalaya and Gulf Coast oysters.

To celebrate our third anniversary, One Fifth is featuring a special dinner with some of their favorite dishes from all four concepts: Steak, Romance Languages, Mediterranean and Gulf Coast. All dishes will be served family style for everyone at the table to enjoy simultaneously.
