Two years ago, Chef Chris Shepherd came up with a crazy idea to open five new concepts in five years, all in one building. A real-world example of Underbelly Hospitality’s philosophy to always be learning, One Fifth allows Chris, chef de cuisine Matt Staph and their team to explore new cuisines, new cultures and shine a light on food that inspires them.

One Fifth Steak was a big surprise to everyone, especially to Chef Chris. And yet, he loved it so much that it inspired his most recent restaurant Georgia James. One Fifth Romance languages was a huge learning curve for Chris—pasta isn’t his true love—but it was, as One Fifth was designed, an incredible vehicle for education. The entire staff at One Fifth—both front and back of house—is enamored with Mediterranean food, and they’re continuously researching to learn about new dishes, wines, spirits and traditions.

To celebrate our second anniversary, One Fifth is featuring a special Sightseeing Tour with some of their favorite dishes from all three concepts: Steak, Romance Languages and Mediterranean. All dishes will be served family style for everyone at the table to enjoy simultaneously.

1st Course
Mediterranean: Hummus and Pita
Romance Languages: 18 month Prosciutto, flatbread, hazelnut agrodolce, stracciatella cheese
Steak: Tuna Tartare, Gochujang, peanuts

2nd Course
Mediterranean: Crispy Pickled Cauliflower, black shallot tehina, black lime
Romance Languages: Charred octopus, hazelnut romesco, salsa verde, squid chicharrones
Steak: Grilled Bacon Sausage, hash browns, cured egg

3rd Course
Mediterranean: Braised Lamb, pomegranate and cherry glaze, peanut dukkah
Romance Languages: Duck heart bolognese, Casarecce pasta, whipped ricotta
Steak: 44 Farms Ribeye

4th Course
Mediterranean: Kataifi cheesecake, orange blossom labne
Romance Languages: Budino, Montenegro cream, chocolate, hazelnuts
Steak: Hummingbird cake, sunflower seed, ginger cream cheese
