Four years ago, Chef Chris Shepherd came up with a crazy idea to open five new concepts in five years, all in one building. A real-world example of Underbelly Hospitality’s philosophy to always be learning, One Fifth allows Chris, chef de cuisine Matt Staph and their team to explore new cuisines, new cultures and shine a light on food that inspires them.
The world looks a little different now than it did back in 2017, but we can't pass up a chance to celebrate this restaurant that has brought us so much joy while also pushing our creative—and logistical—boundaries. As we approach the end of this incredible experiment, we're celebrating our anniversary by serving some of our favorite dishes from our previous concepts.
